bronwyn's dutch loaf

 

Ingredients


2 cups of self raising flour (a mix of white and wholemeal is nice)

1/2 cup of raw sugar

1/2 cup of dried fruit

1/2 cup of chopped nuts

2 tablespoons of honey

3/4 cup milk


Method


Sift flour into bowl and add sugar, fruit and nuts.  Heat milk and honey until just warm and stir into dry ingredients.  Spoon into greased loaf tin and back at 180 degrees for 40 mins or until cooked.


Serve thickly sliced with butter.  Delicious!

KATHY'S DELICIOUS LASAGNE RECIPE

 Preheat oven 180 degrees C; you will need 1 large lasagne tray with deep sides, a frypan and a saucepan; lightly oil the lasagne tray SERVES 6 


INGREDIENTS Half a kilo of pork mince (or lamb) Half a kilo of beef mince 2 tablespoons of olive oil 1 or 2 garlic cloves, crushed 1 onion, chopped A couple of handfuls of mushrooms, chopped (optional) Tin of chopped tomatoes Bottle of Passata Half a cup of beef stock Teaspoon of Oregano or whatever herbs you like Pepper 2 packets of lasagne sheets Packet of grated Mozzarella cheese and 1 large packet of grated tasty cheddar cheese FOR 


THE CHEESE SAUCE 3 tablespoons of butter 3 tablespoons of cornflour or plain flour (I prefer cornflour for ease of mixing) 1 litre of milk or more depending upon the consistency of the sauce 1 cup of cheese INSTRUCTIONS 


FOR COOKING THE MINCE 1. In a large frypan heat the oil. Sauté onion and garlic together for a few minutes 2. Add pork and beef mince and cook. Use a fork to ensure the mince is fine in texture, removing any lumpy bits 3. Once browned, add the tin of tomatoes and the Passata and stir to combine 4. Add the oregano and about a half teaspoon of ground pepper depending on your taste 5. Add the beef stock. 6. Add the chopped mushrooms 7. Simmer the meat for approximately 30 minutes, checking it doesn’t burn. Taste and adjust seasonings if needed 8. 


PREPARING THE WHITE SAUCE 9. Melt butter in a large saucepan and add cornflour, mixing in. Allow to bubble for a couple of seconds 10. Slowly add the milk, stirring constantly until the mixture begins to thicken. If bored, pour a glass of wine! 11. Add a cup of cheese depending on how much cheese you like and stir in ensuring there are no lumps; add a little cracked pepper if desired 12. If the mixture is lumpy, put into a food processor and this will fix the problem 13. 


ASSEMBLING THE LASAGNE Put a little liquid into the bottom of the lasagne dish and then arrange single lasagne sheets to cover the bottom of the dish With a spoon, cover the first layer with mince and then another layer of lasagne, cover this with cheese, then meat and repeat this process until dish is full. (Allowing room to pour over the white sauce). 14. Finish with a layer of lasagne sheets 15. Pour the white sauce over. Sprinkle cheese over the top 16. Bake for approximately 45 minutes or until top is golden brown 17. 


Serve with a green salad or any salad of your choice 

DENISE'S SCOTISH TABLET

Similar to Fudge but with a more crumbly texture but just as addictive


INGREDIENTS: 


 75g sweetened condensed milk e.g. Carnation Milk 

 175g of unsalted butter 

 450g of caster sugar 

 Dash Salt. 


METHOD: 


STEP 1 

Line a 22 x 18cm tray with baking paper. Put the butter and 150ml water in a pan or pot over a low heat, and melt the butter (don't let the water boil). Tip in the sugar and dissolve, stirring often. 


STEP 2 

Bring the water to the boil, turn down to a simmer, then add the condensed milk. The mixture will be a light creamy colour. 


STEP 3

Cook for 20-30 mins, stirring often, until the mixture is thick and a deep caramel colour. 


STEP 4 

To test, drop a little mixture onto a cold side plate, it should not run and should be thick and sticky after 30 seconds. Remove from the heat and beat for 10-15 mins with a wooden spoon until it has slightly thickened. Stop beating when you can feel the mixture turn from smooth to grainy Pour into the prepared tin and leave to cool for 30 mins then while still warm score the tablet into squares. 


Allow to cool overnight. (If Summer put in the fridge).  

KATHY'S ARTICHOKE DIP

Ingredients 


2 tins of artichokes 

2 cups of mayonnaise (I use whole egg mayo) 

1 cup of grated parmesan cheese 

1 clove of garlic crushed 

1 tablespoon of lemon juice (start with less and then adjust to taste) 

Black pepper 

Cob loaf 


Method 


Buzz the artichokes in a food processor (depending on your taste they can be chunky or smooth) 

Place the artichokes, garlic, mayonnaise, parmesan cheese and lemon in a bowl and mix together with a wooden spoon. 

Season to taste. 

Cut the top off the cob loaf and remove the bread from it. 

Ladle the dip into the crust and place in a warm oven (180) for approximately 20 mi

ray's mum's caramel date loaf

Mum called this One "Caramel Loaf" although I think it is more a Date Loaf

1 cup Dates

1 cup Brown Sugar

1 Good Tablespoon Butter

1 Egg

1 Teaspoon Carb. Soda

2 level Cups Flour

Pinch of Salt

1 Teaspoon Vanilla

Cover dates with boiling water and soda and leave to soak one hour.  Cream butter and sugar, add egg then dates and vanilla and finally flour.

Bake in moderate over for one hour.


ray's mum's caramel tart

Make a pastry case or buy one. 


In a saucepan add 1 Tablespoon Plain Flour, Vanilla Essence to taste, 1 cup Milk (full cream), 2 Tablespoons Butter, 1 cup Brown Sugar, 2 Egg Yolks.  


Stir and cook till thick then pile on pastry shell. 


Beat egg whites with Tablespoon Sugar and pile on tart when cold and brown in oven.

ray's mum's butterscotch sponge

This was always a favourite and do you think I can make it the same? - no wa!


2 dessertspoons Gelatine

2 cups Milk

1/4 cup Hot Water

1 cup Brown Sugar

1/3 cup Butter

3 Eggs


Make caramel with butter and sugar, add hot milk, stir in beaten egg yolks and stir till smooth.  


Cool.


Dissolve Gelatine in hot water and add 


Beat Egg Whites till stiff, fold into mixture and set in a mould.


It's like a chocolate mousse only a butterscotch flavour.  Yummo!!


ray's mum's sausage caserole

Now an easy Sausage recipe that is quick and tasty.

Grill or fry 1-2 sausages per person.  I usually bake mine together with however many halved Chat Potatoes.


Put in a casserole dish when cooked.  


Add Tin of Tomatoes, tin of Baked Beans and a few Peas.  


Top with Cheese of your choice and bake in oven 20 mins. or so.  


So easy!
